Vegan “Frikadeller”

Back on track with a recipe from my beloved vegan cookbook “Groen Glaede”, on something that reminds of the typical Danish “Frikadelle”, or in English ‘meatball’, but in a vegan edition! (:
VEGAN MEATBALLS (12 patties)
what you need:
– 2 dl red lentils
– 1 small onion, finely chopped
– 1 teaspoon tahini
– 2 teaspoons wheatflour
– 1 tablespoon lemon zest
– 1 teaspoon salt
– 1 teaspoon pepper
– 4-5 dl oatmeal

how to do:
1. boil the lentils in 5 dl water until they are overcooked, about 20 minutes
2. put in a bowl, and add tahini, onions, flour, lemon zest, salt and pepper
3. add oatmeal until the mixture gets the same texture as a normal meatbal batter
4. let it cool of for a while, and then make it into 12 patties
5. Fry on a pan in plenty of oil (I used olive oil)
6. Serve with ketchup and a bowl of salad, or whatever fits your taste
