Potato Pizza with Walnut Pesto

BOO! Back with an awesome recipe on veggie pizza from “Groen Glaede”

POTATO PIZZA WITH WALNUT PESTO
what you need:
(for the dough)
– 25 g yeast
– 2 dl water
– 1/2 teaspoon salt
– 3 tablespoons olive oil
– 350 g wheat flour

what to do:
1. Mix yeast, water, salt and olive oil
2. Add flour until the dough doesn’t stick to the bowl
3. Let the dough rest for 60 minutes

PIZZA SAUCE & FILLING
what you need:
– 300 g boiled potatoes, sliced
– 1 can chopped tomatoes
– 1 clove garlic

what to do:
1. pour the chopped tomatoes in a sieve.
2. Mix the drained tomatoes with the garlic clove in a blender (or chop the garlic finely and mix with the tomatoes, this is was I did).

WALNUT PESTO
for the walnut pesto I must admit that I bought readymade basil pesto and mixed chopped walnuts into it, because I couldn’t find fresh basil (not the season! But this came out great, except that it got a bit burned in the oven. I will, though, give you the recipe on homemade vegan walnut pesto beneath)

HOMEMADE WALNUT PESTO
what you need:
– 2 cloves garlic
– 50 g walnuts
– 1 bundle of basil
– 1/2 dl olive oil
– 1 teaspoon salt
– 1 tablespoon lemon zest
– 1 1/2 nutritional yeast flakes (if you have)

what to do:
1. Clean the basil and mix all the ingredients in a blender.

THE PUTTING TOGETHER
what to do:
1. with a roling pin get the dough to fit in an ovenproof dish
2. pour the pizza sauce and spread evenly
3. Now put the potato slices on top and add small blobs of the walnut pesto rather randomly.
4. Bake in oven for 30 minutes at 225 C degrees
